The Darling or The Star Grand: choosing your stay at The Star Sydney
You are choosing between two hotels at one Pyrmont address, not two separate neighbourhoods. The question is more about mood, room category and how close you want to be to The Darling Spa, the pool, restaurants and Darling Harbour. The published pages help, but they do not answer everything.

Start with the difference you can actually book
The Star Sydney publishes two hotel names on site: The Darling and The Star Grand. Both sit at 80 Pyrmont Street, Pyrmont NSW 2009, Sydney, Australia, within the same precinct of restaurants, bars, event spaces and the casino venue. For a broader orientation, our full review follows the arrival, hotels, spa, pool and dining in one place.
The Darling is presented as a smaller, more spa-led hotel. Its published categories are The Darling Rooms, Jewel Suites, Adored Suites, Stellar Suites and Penthouses. The official description calls it “Sydney’s five star boutique hotel and urban resort”, and its page shows 2025 TripAdvisor Travellers’ Choice Best of the Best and 2025 Metropolitan Deluxe Hotel of the Year from Accommodation Australia NSW. Those are useful signals, but they do not replace the practical questions: which category, which dates, and whether a spa appointment is part of the stay.
The Star Grand is presented through a wider set of hotel-room and suite categories: Superior King Room, Superior Twin Room, Premium Suite, Royal Suites, Star Suites and Penthouses. The Star Grand Residences are separately published as apartment-style suites, including One Bedroom Pyrmont Views With Office, One Bedroom Suite Harbour View, Two Bedroom Pyrmont or City View Suite, Two Bedroom Pyrmont View Entertainer Suite and Three Bedroom Darling Harbour View Suite.
Room counts are less clear. The pages we could reach do not publish a verified count for The Darling, and we do not use secondary figures for booking advice. For The Star Grand, we also avoid treating a count as the reason to choose it; the safer comparison is the published room-category list.
Choose The Darling if the spa shapes the stay
The Darling makes the most sense when the stay begins with The Darling Spa rather than with a desk, a show or a long dining list. The spa is published as being on Level 2 of The Darling, with treatment rooms, two couples suites, a steam room, Darling Spa jacuzzi, boutique gym and relaxation or tea lounge. Spa guests also have use of the outdoor heated pool and jacuzzi on Level 5 as published.
There is one important planning note. The published spa hours conflict between official pages: one page gives Sun–Thu 10:00am–6:00pm and Fri–Sat 10:00am–7:00pm, while another gives 9:30am–7:00pm Mon–Sun. Treat the hours as variable and check directly with the spa before you build the day around a treatment. Our The Darling Spa page sets this out more closely and links to the official spa booking page.
Within The Darling, the published room categories move from The Darling Rooms through Jewel, Adored and Stellar suites to Penthouses. The names suggest a progression, but the official category list alone does not tell you everything about aspect, floor or exact room feel. If a harbour side, a quieter position or a higher floor matters, ask for it as a preference rather than as a promise. The room allocation remains with the hotel.
The practical appeal is proximity. If you want a morning appointment, a pause in the tea lounge, then time at the Level 5 pool, The Darling keeps the sequence simple. It is also the cleaner choice if you are planning a two-night spa stay and want the room, spa, gym and pool to sit in one rhythm.
Choose The Star Grand if category range matters more
The Star Grand is the more straightforward choice when you are comparing beds, suite types and apartment-style options across a broader published range. Its hotel categories include Superior King Room and Superior Twin Room, then Premium Suite, Royal Suites, Star Suites and Penthouses. If you need twin bedding from the outset, the published Superior Twin Room category gives you a clearer starting point than asking a suite-led hotel to solve the layout later.
The Star Grand also connects to The Star Grand Residences, which are published as apartment-style suites. The named options include One Bedroom Pyrmont Views With Office, One Bedroom Suite Harbour View, Two Bedroom Pyrmont or City View Suite, Two Bedroom Pyrmont View Entertainer Suite and Three Bedroom Darling Harbour View Suite. If you are staying longer, travelling with others, or need a separate office named in the category, this part of the precinct may be the more precise request.
The Star Grand publishes its own pool and gym details: a harbour-view pool heated to 26 degrees, with under-16s accompanied, and The Star Grand Gym and Pool open from 6am–9pm daily on Level 5. The Darling also has a Level 5 pool, published as a 25m outdoor pool open 8am–8pm daily and heated to 26 degrees. If pool timing matters, compare the two pages before you pack; our separate guide to the pool keeps the published access and hours together.
For room-by-room comparison across both hotels, use our rooms and suites table before you send a request. It is the simplest way to keep The Darling Rooms, Jewel Suites, Adored Suites, Stellar Suites, Superior rooms and Star Grand suites in one view.
Restaurants, harbour and transport are shared advantages
Once you leave the room, the choice between The Darling and The Star Grand softens. The published restaurant list belongs to The Star Sydney precinct rather than to one hotel only. Sokyo is listed for contemporary Japanese cuisine; BLACK Bar & Grill is described as a classic steakhouse featuring wood-fired favourites; Cucina Porto is listed for simple, honest Italian food; Rumble is described as a modern contemporary take on South East Asian cuisine with a Thai influence. Harvest Buffet, G&Tea, Fat Noodle, Food Quarter, the 24/7 Sports Bar and the food court venues are also part of the published dining picture.
If dining is the centre of the stay, choose the room category first, then reserve restaurants separately. Our guide to restaurants is more useful than choosing a hotel solely by lift distance. The bars sit across the same precinct too, including Black Bar, Sokyo Bar, G&Tea, Cherry, Rock Lily, Jade Rabbit and the 24/7 Sports Bar as published.
Darling Harbour and Pyrmont are also shared. You are at the same address for the waterfront, the bridges and the light rail. Public transport details published for the precinct include the L1 Dulwich Hill line stopping at The Star, light rail from Central Station via Darling Harbour to The Star, and the F4 Pyrmont Bay service stopping at Pyrmont Bay Wharf, a five-minute walk according to Sydney Lyric information. See getting there by light rail and ferry if the arrival will shape your room choice.
The Star Sydney's casino licence remains suspended (since 2022). NICC (25 September 2026): the Minister amended the Casino Control Regulation 2019 to extend the term of the manager, Nick Weeks, until 30 June 2027; 'Mr Weeks will continue to hold the casino licence for The Star Pty Limited ... allowing the casino to continue operating gaming facilities while its licence remains suspended.'
A calm way to decide
If you want the spa to set the pace, begin with The Darling. Ask for The Darling Rooms, Jewel Suites, Adored Suites, Stellar Suites or Penthouses according to budget and space, then add the treatment time you hope to secure. Because the spa hours vary between official pages, ask the spa to confirm the day’s hours before you treat dinner or pool time as fixed.
If the room layout is the stronger need, begin with The Star Grand. Superior King Room and Superior Twin Room are plain starting points; Premium Suite, Royal Suites, Star Suites and Penthouses take you into larger published categories. If you need apartment-style space, look at The Star Grand Residences and name the category clearly in the request.
If you are here for a theatre night, a restaurant booking, a harbour walk or a simple overnight in Pyrmont, either hotel can work. The Star Sydney is one address with shared dining, bars, transport and Darling Harbour access. The difference is not the suburb, but the way you want the room to support the stay.
For a direct hotel booking path, use the official site at star.com.au/sydney. If you would rather have an independent desk shape the request first, keep the note specific: hotel preference, room category, dates, adults, spa interest and any floor or aspect preference. We will not promise what the hotel does not publish or confirm.
